You may or may not have eaten a stroopwafel before (you probably haven’t), but did you know you’re eating it wrong?
According to this article titled “The proper way to eat a ‘Stroopwafel’,” the proper way to eat a Stroopwafel is as a coffee lid.
You see, a Stroopwafel is a cookie composed of two really thin waffles glued together with a special caramel syrup (the “stroop”). The caramel is sticky and chewy at room temperature, but the real stroopmagic occurs when you rest the cookie atop a steaming cup of coffee or tea for about a minute. The heat warms the waffle, softens the syrup, and allows one to achieve stroopy bliss.
Today, we’ll be eating it the exact opposite way.

For every genius that warms a cookie with a cup of coffee to make it better, there’s a psychopath who sticks it in the freezer with flawed logic. The psychopath’s name? Trader Joe.
But hey, if you’re gonna put something in the freezer for no reason, then you might as well slap some ice cream in there.
Oh My God… the psychopath is the genius.
Trader Joe’s Mini Stroopwafel Ice Cream Sandwiches have two caramel waffle cookies filled with salted caramel ice cream.
Though the real MVP will always be the heated version, I must admit that the ice cold version is a different kind of delicious.
Sure, the caramel is a tougher, denser chew than normal, but it also takes on something of a caramel brittle component in some ways. It’s not so tough that it’s an annoyance, and it provides a distinctly caramel profile to the entire miniature cookie sandwich.
The cookies also taste great with their slightly buttery, delicately vanilla, and subtle cinnamon-spice notes.
The salted caramel ice cream mitigates any complaints about the texture of the caramel, because the entire sandwich is incredibly satisfying to eat. Instead of a crunchier waffle outside, the cookies soften to a texture similar to the chocolate cookie wafers on a traditional ice cream sandwich. Only difference is, these cookies have a much more interesting flavor profile as outlined in the preceding paragraph.
The caramel ice cream is a good complement to the cookie’s flavor – even if its caramel intensity is modest. Could use a bit more salt. I wouldn’t give it terribly high compliments if I consumed it by itself, but I will applaud the shit out of it for finding its way into its little waffle house. Cinnamon and caramel and cold, sweet ice cream make for terrific dance partners.
I forever repeat: thank you for doing things the unconventional way, Trader Joe.

I have had stroopwafels before and they are yummy, but it never occurred to me to put them with ice cream! Leave it to Trader Joe’s. My mom told me they have eggnog yogurt right now

Anyways that looks so good! TJ’s could do a spectaloos ice cream cookie sandwiches to take place of the void when these will be gone after the holiday season. Unless if TJ’s keeps these year round. Love the idea.
