REVIEW: Trader Joe’s Cookie Butter Sandwich Cookies

By now we all know what cookie butter is. But do any of us REALLY know what cookie butter is?

In a nutshell, cookie butter is spreadable Heaven created by crushing up Speculoos cookies and mixing them with vegetable oils to a consistency and texture that resembles peanut butter. But what the heck are Speculoos cookies, you ask?

Speculoos cookies are spiced Belgian biscuit cookies with flavors of ginger, cloves, cardamom, and nutmeg. These flavors scream “fall!”, which means we must review them in the summer.

Cookie butter is so hot right now. Trader Joe’s has really championed the product, turning it into ice cream, cheesecake, chocolate cookie butter cups, and cream cheese. They even introduced a cookies & cream cookie butter. For this, we love Trader Joe’s.  Deep in the bowel’s of someone’s basement, a mad food scientist came up with the idea of cramming cookie butter between two butter cookies. Let’s pause and recap. Somebody turned cookies into butter, and put it between two butter cookies. This might be the cookie version of the Doritos Locos Tacos Doritos from a few years back.

The buttery shortbread cookies were a great choice here. The cookies are crunchy and crumbly with a really satisfying snap. They’re super buttery with just the right amount of sugar and salt. They’re nice and gritty, and thankfully they hold together really well without making a mess. You can twist them apart Oreo-style with ease.

The Speculoos cookie butter filling is exactly what you’d expect – perfection. It’s cinnamon-y, caramel-y, and gingerbread-y. The spices come through first, and then it all finishes with a gentle touch of sweetness. The cookie butter’s texture is smooth, creamy, and a little oily (in a good way). Think natural peanut butter, albeit a bit more whipped.


Eaten as a whole, the gooey cookie butter is the ideal contrast to the crispy and crumbly cookie exterior. The buttery cookie flavors play well with the spiced filling. There’s no need for me to sell you on these cookies any further – you probably got in your car once you read “cookie butter cookies.”
