Ok, ok, ok. I know we said that we were done with pumpkin ice cream when we reviewed Talenti Pumpkin Pie Gelato. But there are a few important things to keep in mind:

Besides, Trader Joe’s Ginger Pumpkin Ice Cream Mouthfuls aren’t strictly ice cream. These are ice cream cookie sandwiches, a technicality that I will fully rely on as an excuse to eat more garbage. Plus it’s National Pumpkin Day!
Trader Joe’s Mini Ginger Pumpkin Ice Cream Mouthfuls are an uncomfortably named product that is quite the mouthful just to say. These intrigued me because ginger is the one spice in the pumpkin pie spice blend that often takes a backseat to the bolder and deeper cinnamon, cloves, nutmeg, & allspice. Ginger has a distinct flavor of its own, and I was curious to try a pumpkin product that put ginger in the spotlight. By “spotlight,” of course, I mean “my fat face.”
These mouthfuls are composed of two ginger snap cookies with pumpkin ice cream sandwiched between. The ice cream itself is mixed with ground ginger, pumpkin, cinnamon, ginger, nutmeg, cloves, and organic pumpkin spice flavor. If you’re paying close attention, you really need to find a more interesting blog and it sounds like they tacked on more pumpkin spice flavor at the end of a recipe that already included every single element of the pumpkin spice blend. This is promising, if not a bit curious. They’re sensibly portioned at only 60 calories per mouthful, a moot point considering I am sure to eat half the box by the time I hit “Publish.”
I began by licking the ice cream out of these Trader Joe’s Mini Ginger Pumpkin Ice Cream Mouthfuls in a manner that would make any porn star proud. This ice cream is super gingery. It’s delectably creamy and offers a delicate balance of pumpkin spices as the supporting cast to ginger in the lead role. I’ve never tried Trader Joe’s Pumpkin Ice Cream, but I’ve been missing out if this is the same product. No, I’m not going to review it. (8 out of 10)
The ginger snap cookies are soft, crumbly little guys with huge ginger flavor as well. Concerned at all that this might be ginger overload? Don’t be. This cookie sandwich is skillfully balanced both in flavor and texture. You’ve got a lot of savory fall flavors packaged together with a near-perfect touch of natural sweetness at the expense of only 6g of sugar. These treats will literally melt in your mouth, making it easy to devour all 12 mouthfuls in record speed. In fact, the biggest criticism I can offer is how quickly these things did soften. Eat them right away if you want the cookies to offer a true textural contrast. Otherwise, you’re eating cold ginger soup. My keyboard is all sticky and I promise you… I promise you, it’s just from melted ice cream.

These look heavenly!! I like it when the ice cream sandwich cookie is a soft baked rather than crunchy. If it’s crunchy then the ice cream just squirts out and your left with an even bigger mess. These look really good though!! What is your go to ice cream sandwich? Great review!!
These are great! I can’t really say that I have a “go-to” ice cream sandwich – I don’t eat many. But if my former fat kid preferences are any indication, a Chipwich will always reign supreme.
